RECIPE SPOT LIGHT

Oatmeal zucchini bread

Ingredients

  • Nonstick cooking spray

  • 6 large egg whites

  • ¼ cup melted avocado oil

  • ½ cup unsweetened applesauce

  • â…“ cup pure maple syrup or honey

  • 2 tsp. vanilla extract

  • ¾ cups all-purpose flour

  • 1¾ cups ground gluten free oats (you can put them in the blender to make flour!)

  • 1 tsp. baking powder

  • 1 tsp. baking soda

  • ¾ tsp. sea salt

  • 3 tsp. ground cinnamon

  • 2½ cups grated zucchini

Instructions

  1. Preheat oven to 350° F.

  2. Lightly coat two 9 x 5-inch loaf pans with spray.

  3. Combine egg whites, oil, applesauce, syrup and extract in a large bowl. Set aside.

  4. Combine ground oats, whole wheat flour, baking powder, baking soda, salt, and cinnamon in a medium bowl; mix well.

  5. Add flour mixture to egg mixture; mix until just blended.

  6. Fold in zucchini mix until just blended.

  7. Divide batter evenly between the two pans.

  8. Bake for 45 to 50 minutes, or until golden brown and tester inserted into the center comes out clean.

  9. Cool bread in pans for 5 to 10 minutes, remove from pans and transfer to rack; cool completely.

TODAYS HACK


Curing inflammation in the body with natural spices!!! (this is great for muscle soreness, pain, headaches, gut health and so much more!)

5-MINUTE GOLDEN MILK RECIPE


Ingredients

1 1/2 cups light coconut milk (canned is best, but carton works too)

1 1/2 cups unsweetened almond milk

1 1/2 tsp ground turmeric (i get mine at TJ maxx!)

1/4 tsp ground ginger

1 whole cinnamon stick (or 1/4 tsp ground cinnamon // I prefer the stick!)

1 Tbsp coconut oil

1 pinch ground black pepper

Sweetener of choice (i.e. maple syrup, coconut sugar, or stevia to taste)


Instructions

To a small saucepan, add coconut milk, almond milk, ground turmeric, ground ginger, cinnamon stick, coconut oil, black pepper, and sweetener of choice (I usually add 1 Tbsp (15 ml) maple syrup.

Whisk to combine and warm over medium heat. Heat until hot to the touch but not boiling - about 4 minutes - whisking frequently. Turn off heat and taste to adjust flavor. Add more sweetener to taste or more turmeric or ginger for intense spice + flavor.

Serve immediately, dividing between two glasses and leaving the cinnamon stick behind. Best when fresh, though leftovers can be stored covered in the refrigerator for 2-3 days. Reheat on the stovetop or microwave until hot.

GLUTEN FREE PUMPKIN PROTEIN BARS


1 C canned pumpkin 
4 egg whites 
3 t raw honey
1/2 t cinnamon 
1/4 t baking powder 
1 pinch salt 
1/4 cup ground oats 
2 scoops protein powder (I used vanilla shakeology) 
1 t vanilla 
Preheat oven to 350
Combine wet ingredients, mix thoroughly. Add dry ingredients, mix thoroughly. Pour in a greased 8 x 8 pan and cook for 18 minutes!

TIP: create a detox water by adding cucumber, fresh mint and fresh lemon juice to your water (let sit overnight to get the most benefits)
